Do I just buy the 122 package for ISO. Then how hard is it to setup for datalogging?

Do a search on "OBD" and you'll find alot of info on how to datalog engine operating parameters. I do it from time to time using a cable and software i got from the above website. When i install a mod on the car i'll perform a datalogging session just to see how the ECU is reacting to it. And yes the $122 ISO model is all you need. Just a heads up... I've tried unsuccesfully to use it with a rs232->USB converter so your computer will need a rs232 DB9 connector. You should also realize that the parts that make up the connector probably cost no more $5 or $6...

I thought it plugs into the serial port of the computer. So you have it plugging into the USB Port? If so, where do I find the parts to make up this adapter?

Yes it does plug into a rs232 port on your computer. I tried a rs232 to USB converter and it failed to work. Could have been something i was doing wrong on my end tho.

So it will work if I just plug it into the 9 pin rs232 serial port on my laptop right?

Does the cable that they use have any electronics on it? Or is it just the OBD adapter with a cat 5 cable into a serial adapter?

it's just a cable, no electronics.
