I'll see if I can get credit for my own suggestions.

You can transfer more heat by either increasing fin area (like you are doing) OR by increasing air flow. How about you take your sheet metal and mount them to catch air from under the car and direct it up onto the factory fins?

Also, I'm going to give away one of my trade secrets here. I have shopped at surplus companies for 30 years, in the old days by mail order only, and now that they are on the Internet it's even easier. Here's a company that has a digital thermometer with a remote sensor for only $26. It only displays in

What about mounting a fan on the back of the diff to more more air over the back of it?

Why don't you just make like some sort of air duct to let wind from underneath the car go just a little to the diff?
