The torque spec is 18ft/ibs. So wait for the pop and then your done with that.
I'm just super worried about over-torquing them, or that the previous owner (or their mechanic) may have already done so on a previous set of plugs....
Thoughts? Should I just get one of the cheapie 'needle on dial' type torque wrenches?

^No. I have seen them used (in great condition) in the for sale section. I picked mine up locally from a shop (again in great but used condition). Check in your local forum, you might be surprised what people have lying around.
