The water is just condensation that is a product of combustion. Once the exhaust system heats up, this water stays in the gaseous form it started out as rather than "condensing" into a fluid. It is normal.
As for your other questions, I'm not even going to touch those with a barge pole. "Idles funny" and "spluttering" are NOT very objective descriptions and could be interpretted as almost anything.

I tried the MAP whack sensor trick and reset the ECU but it didnt stop the rough idle. The idle goes to and from 1000 rpm to 800rpm (back & forth). Its as though i have got very big lumpy cams in the car but it is absolutely stock except for the K & N filter...
A fluctuation of 200 rpm at idle is not anything to be concerned about. It could still be a bad MAP or it could be something sticking with the Idle Air Control. It could be valve adjustment issues, ECU issues, fuel pressure issues, vacuum leak.
I've had full race cams on a muscle car. "Lumpy" would be a fluctuation of over 500 rpm. 200 rpm at idle over a 9000 rpm range is not yet a problem.

, That can be anything from a bent valve to a bad ECU! More details are needed for any type of diagnoses!
