service manual.

you can google s2000 service manual pdf download

don't resurface the head. follow head bolt pattern when removing and torquing head bolts. although not required, i recommend using new head bolts.

Any idea how much they can skim of the head to make it flat?

Please google s2000 service manual. It will tell you everything you need to know. You don't want to touch the head unless it needs it from what I have read

Service manual is incorrect for two specific reasons.

The head is best pulled by leaving the intake manifold, hoses, and wiring all in place.

The current mill spec is void due to the current ongoing loose chain/TCT noise syndrome. ANY amount taken off the cylinder head will skew the chain geometry beyond acceptable limit. It will cause the chain to hook over the top side of the passenger side moveable chain guide, forever accelerating the chain wear, and tensioner problems.

Unless your engine was severely overheated, or the HG is currently leaking, there is no milling required.

I have over two dozen head jobs to date, none were milled.

My previous owner had the head gasket replaced. If I need to check the head to see if needs to be skimmed, do I need to take the intake manifold off in order to test it? I'm assuming the only way to test is to flip the head over.

Yeah. Use a straight edge and feeler gauge:
