Those are multi viscosity oils.
So the 0W-40 is thinnest when cold and the 5W-30 thinnest when hot.
Then it also depends on the brand.
Any list you make would be open for debate.
The 2 15W-xx are the thickest in general I think.

Last Friday I had Motul 10w-30 put in the engine, Amsoil Synthetic in the transmission, and LE-607 in the differential. I'm very pleased with the difference in pickup. The car now feels like it has an invisible "sail" on top pushing it. Previously, I was running Mobil 1, Honda MTF, and LE-607.

in case you didn't realize, the engine is designed around a specific weight of oil spec. hence the reason different cars have different recommended viscosities.
there are a TON of topics in the oil journals regarding viscosities. please read there as others have suggested.
i have read most of them but all they say is just use the recomended as I will, but i am just trying to understand the meaning behind everything.
