The fan comes on when the compressor is on, and since you are removing the compressor, you could take out the fan.
You would be a fool to take the condenser fan out. You should wire it in parallel with the radiator fan. The relay and fuse ann take the load

Both fans will come on with the AC removed, there is no need to change any wiring to them. The fan switch in the radiator still controls the relays.

Both the relays and the fans are in parallel allready, the relays are grounded via the fan switch or the PCM.

When you select AC from the control panel, an AC request signal is sent to the PCM, as long as there continuity through the AC pressure switch. The PCM then grounds the fan relays.

If the high side AC pressure is too high or too low, the pressure switch opens. With no switch and no Pressure, you'll won't have the AC request signal to the PCM.

If you wanted to use the AC button as a manual toggle switch for the fans (with the AC system removed) short the 2 pins on the pressure switch. The PCM will think there is a AC request and turn on the fans.
