That hood insulation is good stuff, I'd put it back in. It is designed for smothering and putting out a fire under the hood if it ever happens. It may also quiets engine noise a bit but that's not it's main purpose.
2)protect the paint from cracking(ask any DSM turbo guy, the paint cracked right on top of the turbine
3)noise
keep it, at least for the first two reasons
