Default The balanced lunch

Rick thinks about food, a lot. He cooks, he plans meals, the whole bit. I'd have a lousy diet were it not for him.

Yesterday I had the MRI appointment at lunch time, after which I was going home, around 2:00. Rick had offered to mix up some tuna, or leave something in the refrigerator for my lunch. He didn't know if he was going to have to go back to work after picking me up, and I guess he didn't want me to starve to death. I thanked him and told him I could make something (though I would be slightly under the influence of drugs).

So, what did I have for lunch?

Well, since it was 2:00 PM, I didn't want to eat a "real lunch." So I had a handful of chips, a few M & M's and a Hoodsie cup. (small cup of ice cream I keep in the house for the grandkids)

Pathetic.

On the plus side we went to a local restaurant for supper. We had some kick A$$ bread with the olive oil for dipping, a salad and a pizza with spinich, feta and garlic. Excellent.

So, who else eats a balanced lunch like I had yesterday?

not me, but then I love food and am not a chocolate lover at all. I like desserts but prefer things like creme brulee, panna cotta, etc, over cake, ice cream or pie. I'll share an occasional chocolate concoction with Jim, but could live the remainder of my life without having dessert. I like real food. Yesterday's lunch was a turkey/apple/provolone sandwich (with honey dijon mustard), a green salad with a little feta and a huge glass of delightful spring water. Today may be the same. Jim topped off his lunch with a big serving of rocky road ice cream, but I passed on the ice cream. I may hike over to the bakery today and pick up some yummy dill bread and make chicken salad. Yep, I think I just convinced myself that's what I'll do.

Can you bring me lunch today???

It's funny, while I can rarely pass up anything with chocolate, I can generally take or leave ice cream. Maybe once or twice a year, I'll ask Rick to stop so I can have a cone of ice cream while we are out and about in the S on a nice day.

I have kept some of those little ice cream cups in my freezer since Ally was little. I RARELY touch them, but yesterday, it just sounded good.

Didn't know you could get the munchies from valium.

^Same here.

I had a Weight Watchers concoction for lunch, yesterday. Spicy rice and beans. Pretty darn good. Today I go to the hospital from 8-12 for my volunteer job. I will probably come home, eat lunch, and then go to the gym. I'm thinking hot dogs, today. I picked up some of those 45 calorie Hebrew National doggies yesterday. They are good! They're 97% fat free.

My lunches are almost always leftovers. So, I start with the protein: salmon, beef, chicken, turkey. Add some potatoes (regular or sweet), and some veggies - usually string beans, carrots, sometimes some corn or broccoli. Maybe a cookie for dessert.

That's about the same as we usually have for dinner (hence the leftovers!)

I absolutely cannot resist any kind of ice cream.

Yesterday I had chicken fried steak, mashed potatoes and gravy, and steamed coliflower for lunch. Oh, and boston cream pie for desert. This is at the hospital cafateria so I assume these were all "heart-healthy" dishes.
