I do love grits. Yum...the +1 has bought all this more healthy stuff (nuts, apples, oat bran cereal, etc) since he got his borderline high cholesterol diagnosis. I think he said he needs to eat two apples a day. No way I'd do that. I'd be sick of apples in about two days. I notice he hasn't been doing it, either. He's always been somewhat conscious of his diet because diabetes runs in his family.

Barb, this self-respecting southerner would say that. I like grits if they're done properly (cannot abide those instant things). However, I like steel cut oats much better.

I also just realized my Zojirushi rice cooker has a setting for porridge

hmmmm bwah hah hah have to try that out...

Barb how do you adjust the cooking times? I'm a mess at figuring out timings!
Also, I think that is nominally 4 servings, correct?

I could definitely see either almonds or ground flaxseed in this mix - raisins do a number on my glucose

Edit: Just found out that we still have a rice cooker, that we never use. Might be time to re-purpose some equipment!

Wow - cooking porridge in the rice cooker worked great! Taste and texture EXCELLENT!

But I need a new cooker; this time a NON-STICK one! Hot aluminum and oats are very difficult to separate

Could you spray it with Pam before cooking? That might help?

Dave I can heartily endorse the zojirushi.
We've got this one, http://www.zojirushi.com/products/nszcc the smaller one. NS-ZCC10
I just went back and looked we've had ours for 3 years now. Goodness knows how much rice it has made.

I'll be trying it out on the morning with the oats.

and Barb was right about the leftovers in the microwave, worked awesome.
