I have always heard that fresh paint should NOT be polished/waxed for at least 30 days, if not more. When I got my car repaired at a body shop they told me 60 days to be safe.

You can wash it to your hearts content, and use some new-paint safe sealants, but I'd be hesitant to get too aggressive with it or you might end up back at the sprayers...

your paint should be hardened already...
a polish that does not contain any sealers or waxes is fine on new paint-
several polishes are "new paint safe"- and they usually say so.

check out this ad, as an example... it says its paint safe:
http://properautocare.com/3mperswirmar.html

do not wax or seal (synthetics) until the paint has "gassed out"- the body shop can tell you how long this will take- very strange that the body shop would wax the car. you should ask if he used a fast cure and how long the car took to gas out. hopefully he will have a good answer!
either your car is already gassed out, or the body shop messed up.

dawn should be o.k. to remove any wax on the car.
