Clay Bar Lubrication
Well, I was helping to restore the paint on a friends car this weekend... and we ran out of detail spray... so we just used a spray bottle of water instead. I actually found it just as easy to use, and I can spray it liberally because we have an unlimited supply.
Is this doing anything to damage the paint? Are there drawbacks to not using the detail spray, and just water in its place?

i would say yes you have the potential to create damage as water does not have the same lubricate properties of say water mixed with a capful or two of car shampoo with the water

Water with car shampoo works great as a clay lubricant. Just plain water won't hurt anything imo, but it's just easier with water/shampoo combo. I know some people will wash their cars and not dry them, but go straight into the clay. I've tried this before and it worked fine. Just be sure to have some extra lubricant for any dry spots.

According to my 8th grade science teacher water is the "universal lubricant" but I would still feel a lot safer using either a detailing spray of the wash/water mix. Whenever I buy new clay, I usually just discard the lubricant spray and just use the water/shampoo ratio recommended by Zaino, that way you can just wash the car rinse it off well and then use the car wash spray for your claying before you dry the car off anyway. Definately a big time saver. IMO the less you have to run a towel over a dry car, the less you will have to worry about spiderwebbing on the paint.
