Tif, the BMW Z3 brigade use The Swan at Bucklow Hill (on the A556) for their meets - very convenient as it's just off the M56. Good parking.
My recommendation would be The Kiltern (A50) - about 5 minutes from the M56 and great for parking. I was eating there the other day and the Citroen Saxo owners were using it for a meet. (Brought back memories!)
There are some great driving roads nearby and Tatton Park for photo opportunities!
Naturally, I'll be attending the meet with Car Connoisseur Jnr!

I think a low key, turn up at the pub and have a pint and a chat meet can be sorted for next week, one early evening Monday through Thursday.
