...and the stock wheels are made by Enkei.

Not just agree, I have seen the Enkei symbol and name on the OEM AP1 16" wheels.

Funny thing is that on the Enkei website you will not find a wheel with an offset close to the Honda spec OEM wheels.
So the Honda specs are real specs.
Something to remember while making a choice.

The sidewall height, and therefore resistance to the lousy roads near me, is significant. Ride quality and the ability to bomb down beat up city streets is a main reason that I chose the S over the 350Z. The Z Roadster's extra 800lbs really hurts it when the roads are bad. The S just flies over imperfections, and the 1st gen felt better than the 2nd gen in this regard.
Well sure, but in your first post you weren't concerned about the amount of rubber between your rim and the ground, you were simply concerned about rolling diameter.

Sure I was:

"...I am not willing to give up the ride quality for a couple percent more grip on smooth asphalt. I live with some pretty rough roads and don't want to be one of those dorks that has to slow to 10 mph to inch his fragile beauty over a bump. "

Actually, that was one thing that I noticed about the 01 I drove vs the 05/06's at various dealers. The 01 was much nicer on bad roads. That could partially be because the AP2 has 7% stiffer front springs. That would make the leading edge of bumps seem softer on the AP1, even though the rear end was softened 10% on the AP2.

Get stock wheels and rubber. You can't go wrong. They sell here for between $400 and $800 depending on condition.

Keep your eye out for some early Japan only S2000 wheels. They only weigh 13 pounds and are the right offsets.

There are a few sets wandering around.

i'm in the same boat. i like the "comfort" of the 16s over the 17s. i also enjoy the cheap(er) 16" tires...

to this day, i have not seen a set of relatively affordable/visually appealing/light 16" rim w/ the proper offset... surely i can order a set of 16s TE37s but... $1500 for 4 chunks of alumi/alloy is a bit beyond my budget for this econo car...
