265's fit on ap2 wheels?
There are guys running 275 rear tires on wider rims and no problems.
However, on OEM rims, a 265 is 20 mm more cross sectional width than the OEM tire. This will pull the sidewalls in somewhat, but I think it'll still work. You may have to reduce tire pressures a bit to compensate for middle tread bulge. This could give a bit more of a "spongy" ride.

I have a set of 275/40-17 Kumho V710s mounted to stock sized rear wheels sitting in my garage. Those are race tires with stiff sidewalls, and are therefore more tolerant of being run on skinny wheels without turning to mush.
I chose 255/40-17 Yokohama AD-07s for the street. They fit and seem to work well.
You can almost certainly mount a 265/40-17, but I couldn't tell you how well it would work especially not knowing the model of the tire you're considering.

So the car will sit 0.3" higher off the ground. I don't think the appearance will be that noticable. Other factors like the fit on the rim will be more important.

Going wider on the front is going to make the car more prone to oversteer. Especially considering that the tread width of the stock front tire is more characteristic of a 185 width tire!
I am personally using 225 front and 255 rear -- but I am running a much stiffer front stabilizer bar than the stock one. The stiffer swaybar reduces oversteer/increases understeer, so I actually want more front tire to keep things balanced.
Have you considered the Kumho ECSTA MX? They come in the stock sizes, they are cheap, and I'm sure they will run rings around the Nittos, in wet or dry conditions.
