You can find off the shelf wheels with those specs. If you are dropping the cash for CCW, you would be much better off with wider wheels and a higher offset. Check the link in my sig for the specs of wheels that will fit with a simple fender roll.

If fender rolling is absolutely out of the question, I would get 8.5" +60 front and 10" +70 rear. That would allow you to run 225/45 front, 255/40 rear without any fender work and leave room to run wider tires in the future if you wanted more rubber.
WoW it looks great. Should i run 17s or 18s??? And how good will it look with thos high offset numbers???

17/18 is personal preference. Generally speaking, I prefer 17" on the S2000 but went with 18's mainly due to tire availability. Once you get into 275+ widths, there aren't any 17" tires available in stock diameter. For example, a 285/35/17 tire doesn't exist. Also, this style wheel has a 16" center and large stepped lip, makes it look smaller than it really is so the 18" doesn't bother me.

It won't be flush with the high offsets, but slightly more aggressive than stock. You don't have any choice if you won't roll the fenders though. You can't have a flush or even semi-flush fitment without rolling the fenders. IMO, if you are going to do this - go all the way and roll your fenders. It will allow you to run a more aggressive setup that will look much better.
