Why, the gearing is too tall now, IMHO? Larger diameter tires would only make this worse.
Plus they would through your speedometer calibration off, as well, unless you can find a different speedo drive gear to correct for the difference.
You might get better gas mileage, but you would lose out on the acceleration end of it.
What is there to gain?

A taller tire might make the expansion joints on the freeway more tollerable. With a supercharger you might be able to do 200 mph. There might be a reason someone would want to do it.

Maybe you are looking for a softer riding tire, rather than changing sizes? Do you have a favorite tire store? They might be able to point you in the right direction. The stock S02's are a rather harsh riding tire and there are many performance tires that will still give you good handling, yet also give a softer. more compliant ride.

If you are after a softer ride try the Bridgestone SO3's in a 205/245 F/R size stagger.
