Would the +30 not poke out more than than the +40? I guess it all depends on the drop I go for and atm I want a drop of around 45mm (leaving a gap of about half a fingers width between tyre and arch)

Yes every time you increase the offset the wheel is pushed out more. The problem with the s2k is that offsets before +40 seems to be very flat and some +50 and below and convex which looks bad on a sports car.

Does the tc105n come in a +35? You should consider that for the back. You definitely cannot fit that up front without mad fender mods so don't try it. But the rear you'll be fine with a roll.

I have an 08 cr on stock suspension and 225/255 rs3s and now z2s and the ap2v3 wheels can rub buttons and fender liners. I have a track alignment too so this combo is basically your baseline.

At the minimum, the rear will have to have the tab relocated.

If you are planning to run a wide shouldered performance tire you will rub at 225/255. If you plan on running a not very wide, not very performance oriented tire, then what's the point of upgrading wheels??

Another option is the pf01 17x8 +50, 17x9 +60. The rears will clear and the fronts may just burn buttons, but will probably damage fender liners less.

My thoughts, if you really want to make sure everything fits without damaging your fenders or hacking things up, your only options are: leave the wheels stock or ce28n, ssr type c, prodrive gc07 in s2000 specific fitment.

Now if you are going to mess with your fenders then do it right, roll the fenders flat then get the best damn wheel 17x9 +45 enkei rpf1 square, clears bbk, you got more track, super light, cheap as hell if you bend them!!!
