Too much variables to consider. Are you rolling your fenders, what camber settings are you running, tire and tire size, what's your ride height, etc.

It looks like it would be +50 in the second line because 7.5 is between 7.0 and 8.0 but in the third line, it has +58 for the 7.5. I know we're only talking about 8mm difference here but I'm not understanding how these numbers are supposed to line up. Can someone clarify?
Closest to OEM/stock fitment would be 17x7.5 +50

You're going to get a lot of opinions of what fits and it'll only get more confusing. Back when Volk and others were producing 17" wheels for the S the safe S2000 fitment was 17x7.5 +50 (F) and 17x9 +63 (R).

I’ve wanted new wheels many times and I’ve got the itch again. 20 years of ownership. I see it’s still difficult to find something that works. I thought the Enkei RPF1 would work but apparently will rub. I don’t see any options for a stock vehicle and doing zero modes.

I purchased a set of RAYS CE28SL on eBay, paid $2,660 plus tax and $380 for duties, they arrived in US from Japan in only 11 days. My car is lowered 1.2" with Swift Spec-R springs. No fender roll, no tab relocation. I'm old so I didn't want any cambered out tucking or stancing shenanigans and I definitely didn't want to scrape the bottom of the car on the ground. These fit perfectly, plenty of clearance as they are very close to OEM spec. Very happy with the result.
17 x 7.5 +48 front
17 x 9 +63 rear

I'm trying to sort out my wheel options and the amount of variables and conflicting info I've found has been fairly overwhelming. I want a lightweight 17" wheel with 245 tires on a square setup that will clear with stock fenders (no tabs, roll, or pull) at stock ride height/suspension. Ideally, I'd like 17x9, as I was originally considering the APEX SM-10RS, but I've seen info that 17x9 ET61 both will and won't fit. But now I'm considering 17x8.5 as that seems to be less prone to fitment issues, specifically the Spoon SW388 in 17x8.5 ET55 and the MITA FKS in 17x8.5 ET63. I'm just not sure what offsets for 17x8.5 will fit properly, and from my searching, it's been difficult finding pictures of people running 17x8.5 square.

It's the tire that will rub the fender, not the wheel. Whether you use a 9 or 8.5 wheel is not going to make a noticeable difference if you are looking at a 245 tire for both. If you are looking to increase fender clearance, 17x8.5 +55 will fit WORSE than 17x9 +61, as the tire will be 6mm more outward on the 8.5.

Yes, I am aware... I've been using plenty of offset calculators. I've run aftermarket wheels on other platforms, but the S2K seems to be a bit more finicky with fitment from what I've been reading. I'm trying to find a fitment for 17x8.5 or 9 with 245 tires that guaranteed doesn't rub on stock fenders since I've seen conflicting opinions. Specifically, I'm looking to see if 17x8.5 ET63 will rub in the fronts with 245s as the MITA wheels are the ones I'm leaning towards.

What tire size did you end up with?

Ended up going 17x8 ET53 MITA FKS wheels with 225/40R17 in the front and 17x9 ET63 with 255/40R17 in the rear. Lowered about 1/2" on Öhlins with a 2 finger gap up front and about 1.75-2 in the rear. Offset fits about as well as I hoped. Front is great, could use another 5mm or so in the rear, but I don't know if I want to run a spacer.

Hello, I need some input about going square on my 2005. I have read many posts to try to find an answer. It's confusing for me to say the least. The car has no modifications to the fenders and have stock brakes. The car has been lowered 1 inch all around. I am asking anyone to help in suggesting rim size and brand model, offset size, and tire size for a square setup without any mods. I been working to find the answer for some time. I just need some help. Thanks in advance.
