thinking about maybe buying these rims for the track.

the rota grids. (i know i know but there cheap and light) plus i love the TE-37 look

5 x 114.3
45mm offset

if so, what size tires will i have to go with?

my car is quite low, will i have rubbing problems?

I think the 45mm offset is to low to run anything but stock size tires and even then they may rub with the car lowered.
