Default Recommended Tire Sizes

I bought a set of CE28SL wheels 17x7.5, 48 offset (F) and 17x9, 63 offset (R). I'd like a nice fit that by any means doesn't look stretched. I HATE the look of stretched tires on wheels! I thank anyone in advance for their input.

Assuming you are more interested in handling than looks, determine what tire you want to use first. The Michelin P4S (probably the best) and the Bridgestone S007A (introduced last year) don't come in the 255/40 size. In that case you would stay with the OEM 215/245 sizes.

Bridgesone S04 tires come in "CR sizing" (215F/255R). On my car the past two summers. These replaced my much loved RE-11A tires now out of production. The S-04 tires are merely "max performance" not "extreme performance" like my RE-11A tires. I can't tell any difference.
