It (installing tow hitches) has definitely been done by quite a few owners. Some S2000 owners like to bring track tires with them to venues and so they do tow hitches/bars and pull a very small trailer. Please do a search and you will find what you need.
Towing an entire car with an S2000 sounds like a terrible idea.

Ask this question in the R&C sub-forum. Many of them tow little tire trailers to the track/autox course. Several brands exist, my favorite being the Chase Race style because you can quickly disconnect the majority of the hitch system when you arrive at the track.

Like I said, you can definitely do whatever you want. It's your car (or will be when you get one). You want to tow motorcycles, a car, a motorhome... it's all your option.
Definitely take the advice of the other poster who suggested you post your query in the Racing & Competition section since some of those owners have definitely added tow hooks for purposes of hauling tires and toolkits on small trailers.
