I change my ....... fluid every X track days.
Here are all the parts I keep track of.
Diff- Every 4 track days or 4K street miles (torque 80-95)
Brake- Every 4 track days (torco, castrol srf, brembi htc4)
Trans- Every 2 track days (Lightweight Shockproof, OEM)
Engine Oil and Filter- Every 2 track days, or 2k street miles (5-40 Rotella, 5-40 Mobil 1)
Clutch- Every 2 track days, or 2k street miles (torco, castrol srf, brembi htc4)
Rear wheel bearings- Every 2 years or 20+ track days. (OEM)
Caliper rebuild every 1-2 years (OEM)
Valve Check every year
All balljoints, bushings, tierods etc, inspected before every event,

Brake - Ideally bleed em before every event, but more like every 2nd or 3rd weekend. Castrol SRF is expensive.
Trans - Every year. I already swapped it once after GTA, and it didn't change anything as far as feel and looked brand new coming out. $40 wasted.

Brake - Bleed every track day, flush with new pads.
Trans - Whenever I start feeling a notchier shift, or experience grinds. Usually twice a year.
Engine Oil and Filter - Every other track day like clockwork. I never skimp on this.
