I plan on doing this to pretty soon myself. I'm gonna have to find tool to cut with though...no access to an air saw.
BTW I just took my hood & fenders off a few days ago.....they are so LIGHT! There is absolutely no reason got get a carbon one, in fact I would be willing to bet that they would be heaver!

I got way to many projects of my own right now. I really don't car if it comes out looking good or not. I just need to make sure I can vent the hot air.
If it looks pretty good I can give everyone a hand doing it.

ASM Full Dry CF = 10.5lbs - as shipped with no paint - weighed by neveronlines2k
Seibon OEM style hood = 20lbs- as shipped with no paint - weighed by neveronlines2k
Stock hood with paint, latch hook, felt insulation, washer hoses and nozzles and is approximately 18lbs 5oz (just weighed it to confirm). I'd be willing to bet that if you remove the felt liner, the inner structural beams and cut a few vents it would actually be lighter. Removing 8lbs.....I totally think it could be done.
And yes its safe to remove the structural beams....been done more than once on a few race cars.
Absolute no reason to replace the hood other than looks and or possibly better air flow design.
Edit;
