Given your criteria, I'd get the Mustang. The only thing the Evo has over the Mustang is more room for rear passengers (which you don't care about) and AWD (which you won't need living in FLA).

I'd go stang for the engine, RWD, and I prefer the styling. If you were to throw snow into the mix it would be a very close, and very difficult decision. I do like the Evo, but I'd chose a GT with brembo's and LSD and not think twice. I have ridden in both cars, both at the track, and on the road and ride quality is about the same on the road, the stang seemed a little more comfortable. (Though neither car would stay on stoc suspension for me.) Both cars handle well, but get a well balanced suspension on both, and add sticky tires, and the mustang would be quicker and more fun to drive at stock of near stock power levels.
Plus the noise from the stang is much better IMO. Both cars are nice, but without your need for 4-doors or AWD, I don't see this being much of a decision.

I would go with the Evo but not with a manual transmission. I'd want a newer Evo with the dual clutch manu-matic. Mitsu's flappy paddle gearbox gets rave reviews at the price point. I like the Mustang's exterior stying but I like the Evo better. As for the interior, they are both "low rent" and I'd probably regret owning either one. The reason for the automatic vote from me is that I actually did replace an 08 S2000 in April of 2011. The reason was my commute. It can take me 1.5 hours to drive 33 miles to work. As good as the S2000 gearbox and shifter is, clutching 400 times on my way to work just wasn't fun any more. I opted for an AMG manu-matic and couldn't be happier. If you don't live with this sort of traffic and enjoy using a clutch, good for you, get whichever one you enjoy.
