Stepping Down
I'll say it again...it's very hard to beat a GSXR 750 for a combination track and street weapon. 600's are too peaky for me on the street, and literbikes too much on the track. In my experience, the 750 is "just right" - the perfect balance of power and agility.

I'm also going to try to ride a Vtwin, It might be a good option. The choppy throttle on inline 4's really scares me.
Throttle choppiness is not a function of engine configuration, but the fuel injection mapping or carb jetting. R1's (I4) have traditionally had very smooth throttle response, whereas the SP1 RC51's (v twin) had very snatchy throttle response.
For me, the GSXR750 is very easy to ride...it feels more like a 600 w/ more midrange and a lot more top-end than a literbike threatening to highside you if you feed it too much throttle.
