I know that smell too. My old man has a '62 one-owner TR4. I think the smell is mainly the old leather. His is powder blue piped with navy. (There's still a pair of one of his previous gf's leather gloves in the glove compartment which the mice have nibbled, and another's lipstick in the door cubby.)
The seats are stuffed with horsehair I think which must add a certain je ne sais quoi to the aroma.
It has a racing handbrake, which I found a bit stange when I used to drive it and a quick-release fuel filler cap.

Happy memory's it's gone a few years but was good fun if a bit industrial.
Did you ever notice that some marques always smell the same. I find all Fords always smell the same, it must be the cheap plastic
It's well known in the Classic Car farternity, that, "that smaell" is made up of the various interior materials that go into the carpets, upholstery, (leather plays a huge part here) and plastics. Add to that the smells coming off the engine due to various leaking gaskets and possibly some exhaust fumes and you have most of "the smell".
However, the real secret ingredient is all the fart gas injected into the seats by the various drivers over the years.
