If you want to see some sights, I'd actually recommend a package tour geared for younger folks. Kon-Tiki has a lot of college students and under-35ers.
If you want to explore stuff on your own, then I'd say pick 3-4 cities you want to visit, get a Eurrail pass, and have at it - this is what I did twice, and it was pretty good. That said, you're completely on your own.
If there's a particular moment in history, art, or culture, you're interested in, that will steer which cities you want to see.
The Lonely Planet guides are my and my dad-who's-the-travel-agent's favorite for younger (read: more mobile) travelers. The Fodor and Let's Go guides are pretty good too. The Rick Steves and Let's Go guides will steer you towards the cheaper end of things (which you'll be thankful for).
