They came out pretty good! I ended up chopping some shallots (that's all I had!) and mixing them in with the taters, then I added salt and pepper. I browned them and then added a dollop of sour cream with some chopped green onions sprinkled on top.

I'm trying to do the "local diet" (ie only purchasing/eating food that's been produced within 100kms radius), but so far it's looking impossible.
