The Router has the latest firmware, no UPnP support. After reading a bunch of forums, no-one it seems has had any luck with my router and a open NAT.
I guess a new XBOX approved router is the easy fix, not gonna spend the money right now.
I will just miss out on some online play, no biggie.

We use the provided one from Verizon.

To clear the Xbox 360 Hard Drive cache, follow these steps:
Re-attach the Xbox Hard Drive.
Locate the System section of the Xbox 360 Dashboard.
Select Memory, select Hard Drive, and then press Y to view the device options screen.
On the Xbox 360 Controller, press the X button, press the X button again, press the left bumper, press the right bumper, press the X button, and then press the X button again.
You will be prompted to confirm system maintenance. Select Yes by pressing A.
To reset the display settings of the Xbox 360 console to the default settings, follow these steps:
Remove any discs from the disc tray.
Turn the console off.
Turn the console on.
Note If you are using an Xbox 360 Wireless Controller, turn the console on by using the Xbox Guide button on the controller.
Note Make sure that you use the player 1 controller when you do this. The player 1 controller is the controller where the upper-left quadrant light is on.
As the console starts, press and hold the Y button, and then pull the right trigger at the same time.
This causes the Xbox Dashboard to reset the display settings to the default settings and then automatically restarts the console. So it's OK when the Xbox 360 console restarts.
