All s2000's are good, but you really need to drive an ap1 and ap2 and make the decision for which one will fit your needs better.

As with anything, best is very subjective and the answer depends on who you ask. It's not one-size-fits-all.

Get the nicest, best maintained/cared-for lowest mileage one you can find...
They are all excellent, well except for the plastic window on the 00-01...
