From what I remember the only kids who ever get hurt in airbag accidents are the ones who aren't properly restrained. My kids wear their seat belts so I am not worried about it.... Plus I can tickle them, poke at them and actually have a real conversation when they are in the front seat vs throwing a walkman at them in the back seat and ignoring them.
Well guess what, we have all 3 of them and they all worked great. Couple things I think you should be aware of:
1. Primo Viaggios work great with their strollers. They can get a little warm during the summer compare to others and they only accommodate up to 20lbs, a few lbs less then what Britax is offering (30+lbs if i remember correctly). Our baby was borned way off the chart in both weight and height. She ran out of room at 4mo so we had to buy the Britax.
2. Britax makes fine seats, search the web and you will find great reviews from MOM

Lots of paranoid parents still have their kids in booster seats at age 10....ahahah... nerds.
We have a rear facing Brtiax that fits into it's own stroller -- a completely worthwhile advantage when the kids are still young.
Forward facing seats are harder to judge; there are so many options. My kid who is old enough rides around in a Recaro which is nothing more than a 50 dollar premium for an otherwise good brand with a different label -- but come on ... why not.

Yes how did we survive before the Safety Nazis came to save us. The airbags on the S2000 will not hurt Jr. unless Jr. is a wimp. I crashed my S and they were more of a PITA than a help. The real pisser was tasting airbag powder for 24 hours ,ruined a good steak dinner for me that night. And the cost to replace them $$$.
Back on topic, Porsche Design has a very nice quality baby seat . We bought one for our sons.

One of the most entertaining stories that my folks still share with friends and family is back when we lived in the suburbs of Chicago back in 1973 and my fathers car spun off a snow covered road into a ditch and there I was, sleeping like a hibernating bear in my mothers arms.
The funny part was that my mother-in-law didn't even notice. It was only when all the honking cars and people waving at her caused her to pull over that she realized what had happened.

My wife was riding in the back (thisr seat, rear facing) of her Mom's station wagon back in the late '70s, and when her Mom floored it from a light on Rt 70 in Cherry Hill, the back door swung open and she fell out onto the highway.

Short answer: Yes, you can skip the middle sized car seat. It's a waste of money if you plan to buy a proper "full size" seat. We made the jump using just two car seats and haven't looked back. Our girl is three years old and still has two slots left (height wise) in her car seat. Should last her as long as we need it to.
My Dad has the Recaro seat - it's awesome! He's actually supposed to send it down to us, since his girl (my stepsister, 18 years younger than me) doesn't need it anymore.
