There's one here in the Baltimore area called Feline Rescue Assn who won't put down animals unless it's absolutely necessary. Hopefully those ones in the link are the same way. If you get a cat a scratching post and show them how to use it (run their paws on the post a couple of times) they won't use your furniture. I know I had a cat that liked furniture too but then I got a scratching post and with a little training, no more problems. A couple of years after I did that I bought a new couch and the cats have never used it as a scratching post because I always provided one for them.
Like dogs don't kill animals for shits & giggles? I've had dogs when I was a kid and they went after rabbits, snakes, anything they could kill. Cats are hunters and so are dogs though cats would argue that they're better at it.
As for cats being temperamental, cats, just like people have different temperaments. Some are very friendly and love being around people. Some are very aloof and only want to be around one person. It all depends on the cat.
