Not only what they said but there are 3rd party (non-Apple) iPod managers that can bypass iTunes completely when it comes to managing files. In the old days I used Ephpod.

Is there a way to move the songs from my ipod touch to a local folder? My ipod is not sync-ed with my local PC and I just need to move the songs from one ipod to another.

There's no official way to do this, and every time Apple releases a new product it seems to get more difficult.

Did you know that all songs offered on iTunes are DRM-free? They're not as restrictive as you seem to think they are.

Regardless, you won't have any issues playing MP3s on an iPod. Supported formats include:
AAC
MP3
Audible
Apple Lossless
WAV
