it's difficult going vegetarian
If you like ground beef in lasagna, Hamburger Helper, etc, try the Morningstar Farms TVP (textured vegetable protein) version of it. You'd be hard pressed to know the difference; in fact, I made lasagna with it once for strict, picky meat eaters, and they didn't know the difference!
Also, if you're being strict about it, watch out for restaurant soup and sauces. A lot of them will tell you when you ask that they are meat product-free when they are, in fact, lard based.

As far as being hungry all the time.
Drink lots of water. That will fill you up plus you should be drinking water anyway and more so when your trying to lose weight.

Try having some kind of veggie snacks ready and available in your fridge.
Like those bags of baby carrots or celery or whatever veggie type of snack you can have.
If you have that stuff readily available it makes it easier.
Exercise or go for a walk. You just got to find what works best for you. Good luck.

Go to a Mediterranean (Persian, Lebanese, etc.) restaurant and eat stuffed grape leaves, lentils, tabooli, ratatouille, falafel, and so on.
Marlana makes wonderful lentil soup with carrots, onion, celery, thyme, parsley, bay leaf. You'd love it.
Last night our son Rhys made Indian potatoes with cumin, mustard seed, turmeric, and a bit of cayenne. Excellent!
I cook eggplant fans: Chop carrots, celery & onions into a shallow dish. Split an eggplant in half lengthwise and cut each half into long 3 - 5 long fingers attached at the stem end--hence, fans. Stuff tomato wedges between the fingers and pack the eggplant halves tightly into the dish atop the vegetables. Top it with thinly sliced onions, ripe olives, artichoke hearts, bay leaves, cracked coriander, and a bit of olive oil. Bake it uncovered at 450 for 10 minutes, then at 350 for an hour and 20 minutes, or until the eggplant is tender. (You can also microwave it for about 20 minutes, but it's better baked.)

My wife is a vegetarian, and I can tell you from personal experience that almost any Morningstar Farms product rocks. Check out Chik Nuggets. Much better than the pieces-parts you would get with actual chicken nuggest.. and far better for you.
Also good is the Boka Burger line-up. My fiance's and my favorites include, spicy buffalo wings and the spicy chik patties.
