Cancun, Mazatlan, Ixtapa, Mexico basically. You can still get 7 day all inclusive packages from travel agents for under $1000/pp, but obviously, the longer you wait, the more you will pay. I can hook you up with a travel agent, but I know she doesn't offer anything you can't get locally.

Booking flights at this time (holiday season) is expensive. I should know, as I'm trying to book a flight out of the country to go to a warm tropical beach in Pacific Asia.

Vegas hotels are about $150/night through the week, but the weekend of the 30/31st, some are well over $1k!

Anyways, we found a trip to Cancun. 8 days, 7 nights (includes New years!) at an all inclusive resort, junior suite overlooking the water, plus nonstop airfare for $2500.

Called the place before booking and confirmed that they are indeed open. Repairs from Wilma are still ongoing at other resorts, but ours have been completed as of 12/1.
