Mall Food- New idea - whatcha think?
With the crap food you're thinking of, call it "Politically Incorrect." Also seems to me the best gimmick food places have you making the stuff right there. More attraction to kettle corn that was just popped in your giant wok. I'd worry about the high fixed costs and possible long term consumer trends (e.g. Amazon.com taking away from brick-and-mortar).

Good popcorn, decent startup costs. Location will be very important.
The nightmare you're about to encounter in this whole food stand/kiosk is staffing. Perhaps you're already aware, but the calibre of individuals you find will be the ones who couldn't get hired by MacDonalds
Maybe not in all cases, but any hospitality or people-service business will have that as your primary challenge.
In all liklihood you'll also notice your sales numbers for the days that YOU are there will be better than when anyone else is there. Even if you aren't working and are just standing there or doing other tasks, the business will never make as much money when you you're off-site as when you're on-site.
