I've never seen anyone peel off anything but the paper. Seems like a waste, because the outer skin tastes a little sweeter than the fluffy bread under it. I prefer the baked baos, but the steamed ones are easier to find.

I've had baos with only vegetables a couple times, but 99%+ of the time they have meat, usually pork. Does an egg yolk count as "meat"?

Vietnamese baos are good too, but I find stranger stuff in them, like tiger lillies or tripe.

Anything with red or black bean paste is a delight my cajun wife doesn't understand.

Damn I'm hungry and homesick for a Chinatown ("homesick for a Chinatown"?? That's totally ABC).

its coz when the buns are being cooked some people poke them. so the outer skin is kinda "dirty" and you wouldnt wanna eat it.

The yellow-trailer park trash descent, not that there's anything wrong with that, tend to pull off the outer skin. It comes from lack of sanitary conditions.

By the way, you LA guys have a great dim sum restaurant on Rosemead Blvd/Valley Blvd in Rosemead. It has the big chickens in front of it. I'm writing about it because it has the best dim sum I have ever had. This is saying something because the restaurants in LA/San Gabriel Valley are all quite good. Just be prepared to wait 1+ hour on a busy morning. Mmm, mouth drooling even thinking about it.
