1052 user here, oil light works fine, I've removed the oil pressure sensor some time ago.

I'd much like it to throw a switch and demand me to over-ride it to continue driving the vehicle.

you dont need the stock oil sensor with AEM or stock ECU

Just disconnecting the wire will not give you a oil light in the dash, you must touch it to the chassis.
