1. Do I need a flex fuel sensor with AEM v2? I would like to add E and 93 whenever I want to and have it adjust automatically.
2. Should I go 1300cc or higher, I would like to keep drivability close to OEM when i run 93.

1. For your goals, yes, you will need a flex fuel sensor. Continental GM sensor works great.
2. You will want to run at least 1700cc or larger. Some people may disagree but I prefer not to run my injectors in the 90%+ DC range. Make sure the injectors you buy are ethanol compliant built with stainless internals.

4. You can use stock ap1 fuel lines.

E85 Flex fuel sensor kit from SOS.
ID1300X injectors.
255 walbro fuel pump or higher.

But definitely get the E85 flex fuel sensor kit first. Get it running/working then upgrade piece by piece dont do it all at once especially if your not familiar with all this stuff. Absolutely no reason to touch fuel lines btw.
