What is the process to put them back together? I'm sure you have to torque them down in multiple stages in a criss-cross pattern, but even then, I'd be scared to drive on them.

I'm sure you know more than I do, so best of luck to you! Those are some nice wheels.
There isn't much torque on wheel bolts. I have no fear of driving on them, like I said, they were put together by someone so the process really isn't any different for me to do it. Just like anything else you just have to take your time and be careful. I wish I would have removed the tires first but I drained all the air out of them at least. I am taking them apart like I would a head, criss cross pattern on the bolts. They are held together with blue loctite and the bolts, that's it. So I will clean up the bolts and put new loctite on them and retorque them in a criss cross pattern just as I took them off. I don't really see it as being a big deal. Plenty of people have taken their Blitz wheels apart on the forums, I don't see this as being any different.

How about a copper dip or a gold-plating. That's seemingly getting more and more popular (while still being a bit moreexclusive).

The copper dip, in my opinion, looks wild and classy as the same time. If I had LM's on Berlina black, I'd leave them as is, or get them polished a slight more than how they come from the factory.

As for going gunmetal, I think you may end up having the same problem as you would with going with powdercoat black. How about a black chrome with a high polished lip?

One of our local guys is getting his valve cover copper plated already so I don't want to bite that from him. I am considering a black chrome, I just have to see what the shop has that will be doing it.

Not the best example (due to the differenes of the car, wheel style, and the colored lip), but I do think it'd look great on an LM on a Berlina Black:
