I've had bad experience with the ABS on my MY06 as well. I use to track a MY03 before and I never had any issues. My 06 goes into limp mode, especially if I get the car a bit out of shape. I think the computer trips out and does a "systems check" sort-a-speak before turning the ABS back on. I think out cars are a bit rear biased too which makes it pretty easy to swap ends if you aren't paying attention or are relying on the ABS (ask me how I know ).

In the future I might pull the fuse for track days and play with the bias via pads.

are permanent magnets in them and they can pick up metal shavings and other crap over time. Anything metallic covering them can reduce their ability to pick up the signal from the reluctor rings leading to ABS lights.
This has caused other cars ABS to malfunction, especially when using Carbotech XP10 or 8 pads. You should always use compressed air to blow off the ABS sensors when you pull the wheels. The first time I looked at my sensors they had a crap load of metal filaments attached to the magnetic ABS sensors.

As for ABS failing only on the track, how often are you getting into ABS on the street? I can't remember the last time it happened to me.

i sometimes get to ABS under hard braking. i'm using pretty crappy tyres so maybe they tend to lock up easier.
