While I'm aware that I can reset the maintenance light myself, what I really want to know is *should I?* Is resetting the maintenence light all that they do? Or is actual maintenence performed?

Resetting the maintenence light is the last thing they do, and that is just so it will pop up in another 7500 miles to remind you again.
There is a whole list of things they do, check in your owners manual, there is the entire maintnenece schedule in there.
I would recommend taking it in and having it done, if not, you would have to do all of the work yourself.
