I'd do a coupe because it would be stiffer and lighter.
The fact that the S was vert really wasn't a factor for me. I've had many verts and I know that in Texas there is very little time each year that you can drive topless comfortably.

Your TX must be different than mine, b/c I enjoy my S2000 topdown almost year round! I had a wonderful topless commute to work yesterday, in mid-70's temps. 
Gotta admit, though, that I have a strong lust for the Cayman S and would buy a Vette in coupe form (albeit w/ both clear and hard tops, prob. no top for long weekend drives).
I guess I'd base my thoughts on a coupe vs. conv. S on their relative performance and the looks of the coupe.
