Do you guys skip gears when taking it easy
Beyond mechanical issues, skipping is bad technique. I understand the situation where you have to suddenly brake but in normal driving, it helps to build muscle memory to run through all the gears. The result will be smoother driving and better handling at the limits of adhesion. I wouldn't differentiate between cruising or hard driving, good technique should be a constant. I don't think a great quarterback forgoes proper footwork or timing because it's an easy throw.

As for muscle memory, for upshifting this should obviously be nothing to worry about. That said I generally do not skip downshifts on the street for this reason, to keep in the practice of heel/toe and rev-matching. At the track, I do skip on downshifts. Fewer opportunities to interrupt threshold braking.
I only occasionally skip upshifts on the street, again, no big deal if done properly (i.e., not doing it from high-rpm, not bogging/lugging in the taller gear).
139k miles, 22+ track days, original clutch, original synchros, not a problem.
Any doubts at all, don't do it.

guys, i am a little confused, there is a lot of "its okay/not okay"

i have a question when coming to a stop say from 6th. i have my foot down on the clutch and i usually take my shifter out of gear. say at 30 mph there is a green light, i will put it in 3rd while rev matching at 3k rpm. is this technique okay, or what should i be doing instead? greatly appreciated!

I see no real need to skip shift on the upshifts. Skip shifting on down shifts makes sense and works well if done properly by selecting the right gear for the speed, rev matching, or double clutching.

Blast up to 9 grand in 1st, grab second, blast up to nine grand in second, slowly shift over to 4th
It was fun getting up to that speed, and now 4th is all I need so as to not be caught speeding
Exactly, but too many people don't do it right, and then they conclude it must be bad
