Insurance advice needed….please help
If he is a veteran he should look into switching to USAA insurance. This shit would not happen with them. The ones that made the red flag is your own insurance carrier that send an uneducated adjuster that does not have a clue of how expensive the seats are. Make a complaint with Insurance Commission and get ready to get a lawyer.
I have Safeco. They do not have to give you new replacement seats (which are about 7k for both) but rather they can give you used seats in similar condition (which do go for around 800 each on craigslist).
You will have to convince them your seats were in immaculate condition to get them to agree to give you the full 7k, and it sounds like you will have to do their arbitration process. I had to do that when I totalled my Evo a few years back, and it was a huge pain in the ass.

Was your process similiar to ours.? What did you/ they ended up doing.

It seems like you have done everything right. I dont' want to be judgmental, but your insurance company seems to be kind of not up to par with insuring your policy.
If I recall, most insurance companies will salvage the car if the seats are stolen, damaged convertible top (frame or cloth), air bags, steering wheel, head/tail lights.

The bright side is, if you ever sell the S, you know it's worth at LEAST $7,000 just for the seats alone.. add the body and motor and you could fetch $7,500 easily.. even if it's a 2000 model w/ 200,000 miles..
