I'd also recommend the hitch mount. If you bike all the time leave it mounted and it's the easiest way to go. As a bonus you could pull a mini trailer with a set of AutoX tires or race tires for days when you want to have some fun of a different sort.
I used a trunk mounted rack on my old 280 Z. It was difficult to take on and off and required lots of extra effort to stabalize the bike so it would not bounce against the car. Like the S, the older Zs had thin sheet metal and tended to deform with only one bike on the rack. I was afraid to put 2 on (two mountain bikes + the rack could be 50-60 lbs). Also, keep in mind once the rack is on you can not open the trunk, a big problem in the S.
I do it all the time. Usually with only one mountain bike but I have had 2. I use pipe insulation from Home Depot to keep the bikes from scratching each other.
The lower strap is secured below the lower lip of the trunk lid. The sales guy secured it to the bottom of the bumper which was too loose. The 3M cloth keeps the paint from getting scuffed. The paint must be clean before the rack is installed. While riding I fold the rack and put it in the trunk. Takes less than 2 minutes to install it.
If I needed to get my mtb around, this is what I would use. Fortunately, I've got the pickup truck to handle the bike hauling and have trails close enough that I usually just ride to 'em.
My Miata had the Da'lan setup, which was also pretty nice, but quite heavy. For the Miata, it was completely hidden and had a curved hitch attachment. Don't know if the S2k is the same, but it was pretty clean.
I bought a Saris Bones rack 2 weeks ago. Took it and my Raleigh bike for a 60 mile jaunt a weekend ago. Worked great, not muss no fuss. I have pics if anyone is interested.
There's suppose to be a proprietary designed bike rack for S2000 that keeps the bikes parallel with the car off of the trunk. I didn't see it setup but the owner of the bike shop I bought my bike from also has an S2000 and said it worked great.
I have not actually seen this rack on a car (just pictures on a web site), but it looks like a good layout to me. The design includes rubber padding any place the rack touches paint. Also, the rack is designed specifically for the S2000 - no "one size fits all," which usually means it "sort of" fits but not quite.
