Parking with the top down
I don't know where in Florida you are but you might want to consider seat locks. There have been A LOT of posts on people that have had there seats stolen in Florida. You might get your top slashed but on the early models getting your seats stolen might total the car.
And i leave the top down if i am only going to leave the car for a couple of minutes. Otherwise top up.

Its like saying "I went in the club leaving my s2k's top down at 9 PM and came out at 2 AM and my seats were gone! What are the chances of that?"

Like many have already said, I only park it top down when i'm running in somewhere for a few minutes and the car is parked in plain sight (like my favorite local cigar shop). Then again, thats in just about the nicest part of town.

Parking top up or down? Depends on how long, quality of the area, length of time, supervision of the parking area (if any), and a bunch of other variables.
As to sun damage to the interior from leaving it top down, There is a solution. Wipe all smooth surfaces down with 303 aerospace Protectant. It protects against UV rays with SP 40 protection.
