By the time you find tires that won't rub you also won't be able to control the car. Simply get rims with the proper offset. And roll the fenders.
Just had a thought, you did modify the liner attachement point didn't you? Where the plastic liner attaches there is a tang that sticks out and plenty of tires rub there. All you have to do is get a hammer and bend it upwards some to give you more clearance. Simple fast and easy.

There is no liner on the rear.. The only reason you would have paint issues is if you pull the fenders so much that you crease the rear quarter panels. I think with 245's and a slight pull with the lip folded all the way up you should be good. The biggest problem is the lip on the inside of the quarter.
I have the same wheels on my car. IT is dropped as well. I just recently hit a bump a little to hard and broke the paint on the fender right near the tire. I am going to get the fenders rolled before i have it fixed this weekend. Rolling the fenders should do the job because it will lift the lip of the fender away from the tire.
fender rolling can be anywhere from $50 per fender and up....the guy in the pictures is
his name is spunkysandoval on the boards and does an amazing job. he got my 9.5 +44 in the rear to clear along with my negative camber.
