In general (by no means is this an airtight rule), the cheaper the car gets, the more shit you'll see people do to them. Conversely, although you'll see some questionable things done to $250K Italian exotics, it's not common.

sure its a track car, but if you can modify it to appeal to you, then why not.
maybe some people think all those stripped out track cars look tacky.
i dont, but as said previously, looks are subjective, wether it comprimises performance or not.

It doesn't compromise the way the car drives either. My car feels fantastic. Sure, if I planned on tracking it (which I do), I will set it up properly; but for 99% of us, the S2000 is a daily driver. Must be nice for you to be able to afford it as a track car where nothing can compromise handling. Why don't you strip out your interior and AC? I have to look at my car every day so I will make it so that I like the way it looks.
LOL proof that this isn't the reason... ask some of the Cali guys about offsets and they won't even give them to you because internet bragging rights mean nothing. I mean how empty does your life have to be for that to mean something??? There are many people who beg for offsets just so they can copy instead of actually buying what they want. Who cares about offsets and lip size as long as it looks good to the owner. Just because the S2000 works great as a track car, it is meant for the street and I don't know about where you live, but here in Southern California, I sit in traffic 90% of the time with cops around every corner. I bought my car to use as transportation and I happen to like the way that it looks. I also happen to like aggressive wheel fitment so I do what I want, and you do what you do.
I just feel bad that you aren't an open-minded individual and that it bothers you that so many people like a certain style that you happen to dislike.

I think the OP's "half off the ground" statement was an exaggeration.
As for the ricey comment - everyone has their own definition of rice. To some it's anything japanese. To some, its cars with cheap autozone parts. To others its parts that are all show (neons, ICE, etc.). To others, myself included, it's looking fast without actually being fast. The slammed and cambered crew falls under this category. Lot's of people are putting high end parts on their cars and modifying them to have looks like their favorite race cars. Race cars are low and have camber and have roll cages and stripped out interiors. There are plenty of people that do this to their street cars. What makes it rice, to me, is that their roll cage is for looks and not approved by any racing sactioning body (and potentially harmful), the cars are slammed so hard it ruins the suspension geometry, the camber is so far out that it is detremental to performance, and the stripped out interior compromises comfort in a daily driver.
That being said, I use the term rice with a sense of respect. If you're doing it for the look, I can appreciate it or dislike it for looks. Personally, I think it looks silly.

3) Did I ever say that fender rolling negatively affects structural rigidity? No.
4) "Reasoning" has very little to do with my post. I'm stating facts, expressing my opinion and asking for others' opinions. I did get an "A" in logic class though.
5) Putting the stock wheels back on and getting it re-aligned is still something extra you have to do.

7) I actually own my S and a 1996 Jeep Cherokee and split time driving them. My S is not soley a track car.
